Explicit English shorthand for concentrated Turkish domates salçası; ordinary tomato paste is a separate R36 concept.
Forms that matter
Double-concentrated salça
Twice-reduced tomato concentrate.
Used for: Where a small spoonful must carry the whole tomato base.
Not interchangeable with: passata; thin tomato purée; mixed tomato and pepper paste.
Single-concentrated salça
Once-reduced tomato concentrate.
Used for: Where a looser, less reduced tomato base suits.
Not interchangeable with: passata; thin tomato purée; mixed tomato and pepper paste.
Easily confused with
Turkish pepper paste / biber salçası — Both are called salça, are shelved together and are packed alike, but one is concentrated red pepper and the other concentrated tomato. A mixed tomato-and-pepper paste is neither and falls outside both.
