The dried aromatic pericarp (husk) of Zanthoxylum species used in Chinese cooking as huajiao, valued for citrus aroma and the numbing ma sensation. Red and green huajiao are distinct culinary types.
Shelf-stable
What it is
How we read a bare request for this
An unqualified request resolves to the concept and asks red versus green and whole versus ground. No colour is chosen silently.
Where it is used
Used in mapo tofu, mala hot pot, dry-fried dishes and Sichuan sauces.
Also called
da hong pao huajiao, green huajiao, green Sichuan pepper, 花椒, huājiāo, 青花椒, qing huajiao, red huajiao, red Sichuan pepper, hua jiao, Sichuan peppercorn, Sichuan peppercorns, Szechuan peppercorn, Szechuan peppercorns
Ask red versus green huajiao.
Ask red versus green huajiao and whole versus ground; never choose a colour silently.
Ask red versus green huajiao and whole versus ground.
Common retailer spelling; same red/green question applies.
Common retailer spelling.
Forms that matter
Whole green huajiao (qing huajiao)
Whole dried husks of green Sichuan pepper (qing huajiao), bright and lemony. A separate culinary type, not an unripe red husk.
Not interchangeable with: black peppercorn; pink peppercorn; sansho.
Ground huajiao
Sichuan pepper ground to a powder. Aroma fades faster than in whole husks and the colour type is a product fact.
Not interchangeable with: black peppercorn; pink peppercorn; sansho.
Whole red huajiao
Whole dried husks of red Sichuan pepper (hong huajiao), warm and woodsy with deep numbing character.
Not interchangeable with: black peppercorn; pink peppercorn; sansho.
Sichuan peppercorn — ground
Variant retained only where the exact reviewed title/form signature establishes the stated distinction.
When the dish decides
Mapo tofu
The numbing ma of mapo tofu comes from huajiao. Red is the usual choice and some cooks use green or a blend, so no colour is forced and whole husks ground fresh are common.
Black pepper, pink peppercorn and chile are not substitutes, and sansho is not an automatic equivalent.
Easily confused with
White pepper — Both are called pepper in English, but white pepper is retted Piper nigrum and Sichuan pepper is the dried husk of a Zanthoxylum species with a numbing character. Neither resolves to the other and neither substitutes for the other.
Where to look

About the product itself
This describes what the product is. It does not indicate that
this store carries it.
A Sichuan-pepper specialist's own reference article distinguishes red huajiao (hong huajiao, Zanthoxylum bungeanum) from green huajiao (qing huajiao, Zanthoxylum armatum) and states explicitly that they are two distinct species rather than ripe and unripe stages of one fruit, and that the edible part is the papery husk. Supports the red/green non-equivalence at concept level. It establishes no product, seller relationship, stock or sensory outcome for any particular lot. 50Hertz Tingly Foods · Aug 31, 2026
